PUDDINGS AND SAUCES 131 VEGETABLE SAUCES Broiled Mayonnaise or Mock Hollandaise Sauce (for asparagus, brussels sprouts, string beans, broccoli and the like)—-Beat 1 egg white until stiff but not dry; fold in ] cup mayonnaise. Pour to 1 Y%-inch thickness in shallow baking dish; place 4 to 5 minutes under very hot broiler until delicately browned, about 1 minute. Pass separately, with vegetables. Makes 1 cup. Lemon and Orange Sauce (for brussels sprouts, carrots, and beets)—-Heat together in double boiler 6 tablespoons butter, 2 tablespoons water, 2 tablespoons lemon juice, 4 tablespoons orange juice, %4 teaspoon salt and Ye teaspoon paprika; add 2 well- beaten egg yolks; beat well and cook until thick; remove from heat and add 2 tea- spoons each of orange and lemon rind. Makes 34 cup. Real Hollandaise Sauce (for asparagus, broccoli, brussels sprouts, string beans and the like)——Divide 2 cup butter in 3 parts; place one part in top of small double boiler; add 2 well beaten egg yolks and 1 tabiespoon lemon juice; mix well. Place Over water just below the boiling point; stir constantly until butter is melted; add ‘second piece of butter; continue stirring until mixture thickens. Then add last piece of butter; continue cooking until mixture thickens again, stirring constantly. Remove at once from heat and add a dash of salt and pepper. Makes 34 cup. DESSERT SAUCES Chocolate Sauce (for ice cream and puddings)—Sift powdered sugar and measure 2 cups. Melt 4 one-ounce squares unsweetened chocolate in top of double boiler; add sugar, Y2 cup evaporated milk, and Y2 cup butter. Cook until thickened, stirring constantly. Makes 2 cups. Foamy Fruit Sauce (for steamed and baked puddings)—Scald Y2 cup milk in double boiler; sift powdered sugar and measure 2 cup.
