Baked Pike Fillets 1 pound pike fillets % cup bread crumbs \% teaspoon salt or % cup grated cheese Few grains pepper 1 teaspoon lemon juice % cup butter Cut fillets in portion sizes. Season with salt and pepper. Lightly brown butter in the oven in baking dish. Dip fish in browned butter and roll in crumbs or grated cheese. Sprinkle with lemon juice. Bake in a hot oven (450°F.). Pike, Danish Style 1 pound pike fillets Few grains pepper \% teaspoon salt 1 teaspoon lemon juice Season fish with salt and pepper and sprinkle with lemon juice. Wrap fish in steam-tight envelope of greased aluminum foil. Bake in a hot oven (450°F.). Allow 10 minutes cooking time for each inch thickness of fish. If fish is frozen, double the cooking time. Add 5 minutes longer for heat to penetrate foil and fish. If fish is frozen, add 10 minutes longer. Drain fish and reserve stock for sauce. Remove fish to a heated serving dish. Serve with Mustard Sauce. Mustard Sauce 2 tablespoons butter or other fat Few grains pepper 1 tablespoon flour 1 cup fish stock plus water to 2 teaspoons dry mustard ' make volume Y% teaspoon salt 2 tablespoons light cream Melt fat and blend in all dry ingredients. Slowly add fish stock and cream. Cook and stir until thickened. Serve with pike. Makes 3 to 4 servings. 16
