MEATS 97 S oS PEPPER STEAK 1 flank steak (about 11% Ibs.) cut in wide strips 1 beef bouillon cube Yg teaspoon pepper 2 tablespoons lard or oil 1 large onion sliced in rings 1 tablespoon flour 2 green peppers sliced in rings Y2 cup catsup 1 tin (3 or 4 oz.) Y cup water sliced mushrooms 3 tablespoons soy sauce Brown meat in the fat in large frying pan or dutch oven. Remove from heat. Take out the meat and pour off extra fat. Stir in flour, catsup, water, soy sauce, bouillon cube and peppers. Heat to boiling, add browned meat strips and onions. Cover and simmer 30 minutes or until meat is tender. Then add green peppers and mushrooms and the juice. Simmer 10 to 15 minutes. Pepper rings should not be cooked too long Makes 6 servings. SAUERBRATEN (Sour Beef) 4 Ibs. beef rump or chuck 2 cups water 1 large onion 1 teaspoon peppercorns 3 bay leaves Y% cup brown sugar 2 cups vinegar 1 tablespoon salt Sprinkle meat with salt and pepper. Place heated vinegar, water, spices, onions and brown sugar in a large crock. Place meat in this mixture for three days. Turn meat occasionally. Cover meat and keep in cool place. Take meat out at the end of three days. Brown in kettle and cover with onions, and add some of the strained liquid. Cook slowly until tender, for about 3 hours or less. Serve with noodles. Use the gravy in kettle. MEAT KING 1 lb. ground beef 1 cup bread crumbs Y2 lb. ground pork 2/3 cup crushed pineapple Y% Ib. ground veal Yq cup pineapple juice Mix above together, then add: 2 eggs 3 teaspoons salt Yq cup pimentos Y2 teaspoon pepper 3 strips diced bacon 2/3 teaspoon dry mustard or 1 teaspoon prepared Bake in greased mould pans for 2 hours at 450 degrees. | use two small moulds for this amount. Serve hot with buttered vegetables in the centre. BROILED HAMBURGERS 2 Ibs. hamburger meat 1 medium size onion, chopped 2 beaten eggs real fine Y cup cracker crumbs 2 tablespoons worcestershire sauce Add salt and pepper. Mix well and make patties. Place on greased pan. Brush with soy sauce and brown, turn and brush with soy sauce. Brush only once on each side. Be careful and do not use too much salt as soy sauce is salty. 8 servings. CHILI 2 Ibs. ground beef 1 small onion 1 teaspoon garlic salt 1 teaspoon ground cominos seed 1 can tomato paste diluted with (cummin seed) 1 can tomato soup or juice Brown meat in crisco or suet fat. Add other ingredients and simmer a while. 2 tablespoons chili powder 1 teaspoon paprika . Salt to taste (I simmer 1 to 2 hours). Beans may be added just before serving if desired.
