Phone 427 HOT MILK SPONGE CAKE By MISS J. CARLYLE 2 eggs 1% tsp. baking powder 1 cup sugar 1% cup hot milk 1 cup sifted flour 1 tsp. butter Beat whites of the eggs stiff. Beat yokes light. Add to whites with sugar. Beat three minutes. Add flour and baking powder alternately with milk in which butter has been melted. Bake 35 minutes at 350 degrees in 7” pan. Tube pan is best. Frost when cold. JELLY ROLL By MRS. J. QUINTEN CRAWFORD 3 large eggs 1 tsp. baking powder 1 cup fine sugar 1 cup pastry flour % tsp. vanilla or lemon ex- 4 tsp. salt tract 2 tbsp. cold water Separate eggs, beating yolks and sugar together until quite thick. Add extract, then add lightly the stiffly beaten egg whites. Sift together four times, flour, baking powder and salt. Fold into egg mixture alternately with the cold water. Turn into a jelly roll pan, which has been lined with well greased paper. Bake in moderate oven 10 minutes. Turn out into a clean slightly dampened cloth. Remove paper and cut crisp edges off. Spread with jelly or jam and roll quickly. Sift fine sugar on top. JITNEY CAKE By MRS. KEITH SNELL 1 cup brown sugar 2 cups flour ly cuy shortening %4 tsp. baking powder 2 eggs 1 cup raisins and nuts chopped 1 cup sour milk Salt 1 tsp. baking soda Little cinnamon Cook in a loaf tin in a moderate oven 45 minutes. BLAIR 1 heaping cup flour 2 eggs 34 cup sugar (granulated white) 2 tsp. baking powder pinch salt vanilla 11 tsp. melted butter milk Break 2 eggs in cup and add melted butter and fill cup with milk. Add to flour, sugar and salt mixture. Lastly add baking powder and vanilla. Bake in moderate oven. Excellent for making mocha balls.
