DESSERTS 123 STEAMED FRUIT PUDDING 14 cup molasses 21% cups sifted all-purpose flour 1 egg, well beaten 1 teaspoon salt 1 cup unsweetened applesauce 1% teaspoon baking soda V4 cup raisins, chopped 114 teaspoons baking powder ¥4 cup uncooked prunes, 1 teaspoon cinnamon chopped lg teaspoon ginger 1 cup dry bread crumbs 14 cup suet, chopped Mix together the molasses, well beaten egg and applesauce. Mix the chopped raisins and prunes with the dry bread crumbs; combine with the molasses mixture. Add all the remaining in- gredients; mix thoroughly. Turn into one large mould or indi- vidual moulds which have been oiled, filling them only half full. Put on oiled lids or tie on wax paper. Place in a steamer and cook for 2/4 hours (large mould) or 114 hours (individual moulds). Serve hot with Orange Sauce. Serves 8-10. RICH PLUM PUDDING 1 cup stale bread crumbs 4 cup sifted all-purpose flour 14 cup grape juice lf teaspoon nutmeg 3 eggs, lightly beaten 1 teaspoon cinnamon 1 cup seeded raisins 14 teaspoon mace Vg cup currants 14 teaspoon salt 1 cup mixed peel \4 cup brown sugar 1 cup suet, chopped 2 tablespoons cream Soak the bread crumbs in the grape juice; beat till smooth. Add the eggs, lightly beaten; add all the remaining ingredients; blend well. Pour into a large oiled mould; cover tightly and steam for 3 hours. Invert on a hot platter; serve with Rich Sauce. Serves 10. STEAMED PUMPKIN PUDDING V4 cup shortening lf teaspoon baking soda 34 cup brown sugar 14 teaspoon nutmeg lf cup corn syrup 1g teaspoon ginger 2 eggs, unbeaten 1 teaspoon cinnamon 34 cup canned pumpkin 1 teaspoon salt 2 cups sifted pastry flour 14 cup thick sour milk 114 teaspoons baking powder l4 cup nuts, chopped Cream together the shortening, brown sugar and corn syrup. Add the eggs, one at a time; beat the mixture till light. Add the pumpkin and blend. Add the sifted dry ingredients alternately with the sour milk; add the chopped nuts. Pour into a 1)4-quart oiled mould; cover tightly and place in a steamer. Adjust the lid; steam for 2 hours. Serve hot with Fluffy Sauce. Serves 8.
