28 PERKY PORK CHOPS PORK 'N' LIMA SCALLOP 6 pork chops, cut 1 inch thick 4 cups cooked large dried limas 1 tablespoon salad oil Salt and pepper to taste 1 large onion, sliced 1 apple 1 can tomato soup Brown chops on both sides in oil. Remove from pan. Cook onion until golden brown. Stir in soup and lima beans; cook, stirring until well mixed. Put beans into 3 quart casserole. Place chops on top. Sprinkle with salt and pepper. Cut apple in half and core. Slice thinly and place slices over each chop. Cover. Bake in moderate oven, 375 deg. F., for 40 minutes or until done. SWEET 'N' SOUR CHOPS 6 pork chops 1/4 cup flour 1 teaspoon ginger 3 tablespoons brown sugar 1 teaspoon salt 2 tablespoons white vinegar 1/2 teaspoon pepper 1 cup pineapple juice 1 teaspoon paprika 2 tomatoes, sliced Mix flour, ginger, salt, pepper and paprika. Place pork chops in flat pan and rub them liberally with the mixed spices. Brown in frying pan. Return to flat casserole. Mix together sugar, vinegar and pineapple juice. Pour over chops. Cover. Bake in slow oven, 325 deg. F., for ] hour or until tender. Serves 6. (Top chops with sliced tomatoes before baking.) ORANGE PORK CHOPS 6 thick loin pork chops 1/8 teaspoon pepper 6 whole cloves 2 tablespoons shortening | teaspoon salt 1 6 ounce can frozen orange juice, 1 teaspoon paprika thawed and undiluted 1 tablespoon brown sugar 1/4 teaspoon cinnamon Insert 1 clove in centre of each pork chop. Blend salt, paprika and pepper. Rub chops on both sides with this mixture. Brown chops on both sides in melted shortening. Combine orange juice with brown sugar and cinnamon and pour over chops. Cover. Simmer 40 to 50 minutes or until fork-tender and well-done. Serves 4 to 6. PORK CHOPS SUPREME 8 tablespoons raw rice 1 medium onion, sliced 4 thick pork chops 1 can condensed consomme, 1 large tomato, sliced undiluted Marjoram and thyme Place uncooked rice in bottom of buttered casserole. Place chops over rice. Top each chop with thick slice of tomato and onion. Sprinkle with marjoram and thyme ( just a little). Pour consomme over all. Cover. Bake in moderate oven, 350 deg. F., for 60 to 70 minutes or until tender. Serves 4.
