52 HUSH PUPPIES 1-1/2 cups corn meal 1 small onion, finely chopped 1/2 cup all-purpose flour (optional) 2 teaspoons baking powder 1 egg, beaten 1 tablespoon sugar 3/4 cup milk 1/2 teaspoon salt Sift dry ingredients together. Add onion, beaten egg, and milk, stirring lightly. Drop teaspoon- ful of batter for each hush puppy into deep hot fat, 360 deg. F., and fry until golden brown. Fry only a few atatime. Drain on absorbent paper. Serve hot with fish, meat or main-dish salads, or with jam as a snack. Note: Fry in the fat that the fish was fried in, to give a good flavor. If you serve these as a hot bread with jelly, omit the onions and fry in fresh fat. ONION SHORTCAKE 4 large mild onions, sliced 2/3 cup milk 1 tablespoon shortening 1 egg, beaten 2 cups sifted all-purpose flour 1/2 cup milk 4 teaspoons baking powder Grated cheese 2/3 teaspoon salt 4 tablespoons shortening Slice onions into 1 tablespoon melted hot shortening. Fry until golden brown. Sift dry ingredients together. Cut in shortening. Make "well" in middle of ingredients and pour in milk. Stir just to blend. Do not beat. Spread dough over bottom of greased 2 quart casserole. Cover with cooked onions. Combine egg and milk. Pour overall. (Sprinkle with cheese, if desired) Bake in hot oven, 450 deg. F., for about 20 minutes, or until done. Good with salads or in lieu of potatoes with beef, seafood or poultry. BOSTON BROWN BREAD 1 cup corn meal 1 teaspoon salt 1 cup rye or white flour 2 cups sour milk or buttermilk 1 cup graham flour 3/4 cup table molasses 2 teaspoons baking powder 1 cup chopped raisins Combine dry ingredients. Stir in milk, molasses and raisins. Fill greased bowls or cans 2/3 full. Cover tightly. Steam for 3-1/2 hours. Uncover and bake in a 300 deg. F. oven todry. Cut slices with piece of string. Serve with hot casserole dishes or Boston Baked Beans. YORKSHIRE PUDDING 1 cup sifted all-purpose flour 1/2 cup milk 1/4 teaspoon salt 2 eggs 1/2 cup cold water Sift dry ingredients together. Make "well" in centre of flour. Pour in milk. Stir gradually and then beat well. Add eggs one at a time and beat thoroughly after each addition. Last of all, add cold water and beat until mixture is all bubbly on top. Put in refrigerator for 1] hour. Put batter into piping hot, greased muffin pans. Bake in hot oven, 400 deg. F., for 30 minutes. These should be high, crisp on the outside and tender inside. Note: This can be baked in hot, greased 9 x 9 inch pan. Popovers: Use the above recipe and bake in muffin pans.
