‘ oes as Ole = ‘foe — ee — ——_ a PINEAPPLE ZUCCHINI CAKE Siegrun Parker 3 eggs 3c. flour 1c. oil 2 tsp. baking soda 2c. sugar 1 tsp. salt 2 tsp. vanilla 1/2 tsp. baking powder 2c. zucchini, grated — 11/2 tsp. cinnamon 1-8 oz. can pineapple, drained 3/4 tsp. nutmeg 1c. chopped nuts Beat eggs; add oil, sugar, vanilla until thick and foamy. Stir in grated zucchini, pineapple. Add all dry ingredients. Add nuts; blend well. Pour into 2 greased and floured square pans or 1-9x13 pan. Bake at 350 degrees for 1 hour.
