42 THE BLUE BIRD CooK BOOK AUNTY’S NOODLE RING 5 eggs 1 cup milk 1% cups cream 2 pkgs. medium width noodles Cook noodles about 20 minutes in salt water. Butter the ring mould well. Beat eggs until frothy, add Y%2 teaspoon of salt, cream and milk. Blend well. Pour some of this mixture into mould or casserole then put in noodles and cover with remaining mixture. Grated onion and a dash of cayenne pepper adds zest. Bake 30 to 40 minutes in pan of hot water at 350 degrees. Serves 8. STUFFED MUSHROOMS 12 large mushrooms 2 tablespoons butter 2 cups cold water 1 tablespoon fine bread crumbs 1/3 cup vinegar or lemon juice Y% teaspoon salt 1 tablespoon chopped parsley Ye teaspoon mace Pinch caraway seeds 2 egg yolks, slightly beaten Wash mushrooms, remove stems and soak caps 10 minutes in the vinegar and watef™mixture. Drain. Chop stems and mix with parsley and caraway seeds and saute lightly in butter. Stir in crumbs, salt, mace and remove from heat. Add egg yolks and stuff lightly into caps. Place in shallow buttered pan and bake in hot oven (400 degrees) 15 minutes or until brown. Makes 6 portions. HAM SOUFFLE Make a white sauce of: 1 cup milk 2 tablespoons butter 1 cup cream 2 tablespoons flour Add: 2 cups chopped ham (home- 3 eggs, beat yolks and whites cooked) separately 1% tablespoons chopped parsley Salt to taste 1% tablespoons chopped celery leaves Bake in greased ring mould in pan of water 30 to 45 minutes or until brown. Oven 350. Serves 6. May add 1 cup cooked mushrooms and 12 teaspoons grated onion and 14% tablespoons of pimento if desired. Sprinkle cheese over top. BEEF CASSEROLE (Chinese) 1 Ib. ground beef 2 tablespoons cream 1 pkg. (10 oz.) frozen peas 1% teaspoons salt (thawed) Y2 teaspoon pepper 2 cups sliced celery 1 small onion finely chopped 1 can mushroom soup 1 cup crushed potato chips In this recipe the slices of celery taste surprisingly like water chestnuts there- fore Chinese. Cook beef in frying pan until brown and crumbly, add fat if necessary, turn into a 2¥2-quart casserole, arrange thawed peas over meat, then cover with sliced celery. Sprinkle potato chips over top. Bake in moderate oven (375 degrees) for 30 minutes or until soft and bubbling. Serves 6. Mix together soup, cream, salt, pepper and Onions, pour over celery. NOODLE SURPRISE 2 pkgs. fine noodles 1 large onion chopped and 1 small can olives, chopped slightly browned 1 can (2) cream style corn 1 can chipped beef cut fine 1 can hot sauce (Spanish) Y% Ib. cheese cut in pieces 1 can mushrooms Salt, pepper and a little Y2 can tomato puree dry mustard Cook in moderate oven 30 to 40 minutes. Serves about 10. Can add another can of corn and one of tomatoes.
