VEGETABLES NOODLES ‘KORNOWSKY STYLE’ 1 pound wide egg noodles Y% cup butter or margarine ¥% to 1 cup sliced onions Salt to taste Cook noodles in boiling salted water, and drain. Saute onions in butter until soft, add noodles and mix lightly. Turn heat very low and let noodles warm through, mixing lightly from time to time, to blend in the flavor of butter and onion. Serve hot. N.B. Almonds make a tasty variation — or sprinkle with parmesan cheese. Greta McIntosh RICE WITH RIPE OLIVES 1 cup ripe olives 1% cups hot water 1 cup brown or regular rice 1 cup canned mushrooms % cup cooking oil 1% teaspoons salt % cup chopped onion 1/8 teaspoon pepper 1 cup canned tomatoes 1 cup diced cheddar cheese Cut olives in small pieces. Brown rice in oil, stirring constantly. Add onions and cook till transparent. Add remaining ingredients, except cheese. Heat to boiling. Stir in cheese and turn into 1% quart casserole. Cover and bake at 325° for 1% hours, stirring once after first half hour. If desired, garnish with bacon curls and additional ripe olives. Serves 8. Lccale Giese POTATOES ROMANOFF 6 large baking potatoes 1 cup chopped green onions, or chives 2 (10 oz.) cartons sour cream 1% teaspoons salt 1% cups grated sharp cheddar Y% teaspoon pepper cheese Paprika Boil the potatoes, unpeeled, until barely tender — don’t overcook. Allow to cool at room temperature (overnight if you wish) then peel and shred coarsely into a large bowl. Blend sour cream, 1 cup grated cheese, onions and seasonings together, and fold carefully into potatoes. Top with remaining 2 cup cheese and sprinkle with paprika. Cover and refrigerate several hours, or overnight. Bake uncovered at 350° for 30 to 40 minutes until thoroughly heated. Serves 8 to 10.
