Scald cream or milk in double boiler. Beat eggs until creamy— add sugar, beat well. Add to scalding cream and cook 5 minutes or until mixture coats spoon. Cool on cupboard, then pour into chilled cake pan. Chill to mush—'% hour or so. Don’t freeze too hard— still be able to stir. Whip cream until stiff, add salt and flavoring. Fold custard into it and beat well. Put into container and freeze. Beat well with mixer every % hour so as to become fluffy while freezing. Will ripen in 2 hours. Yield—6 servings. Maple Walnut Use % cup brown sugar instead of white, and add % cup walnuts crushed fine in a plastic bag with a rolling pin. Lorraine Harrison (Pottinger 60B). ICED LEMON FRUIT JELLO Mix as usual 1 pkg. lemon jello (1 cup boiling water, 1 cup cold water). Add No. 2 can drained crushed pineapple—2 bananas, 24 little marshmallows. Set till firm. Mix together— 1% cup pineapple juice 1 level teasp. corn starch 1% cup sugar 1 beaten egg Cook till thick—then cool thoroughly. Fold % cup whipped cream into this. Spread over jello. QUICK PUDDING Cake 1 cup flour 1% cup sugar 2 teasp. baking powder pinch of salt 1% cup currants, or raisins 3%4 cup milk Sauce 1 cup brown sugar 1 tbsp. butter 2 cups boiling water Let brown sugar brown in saucepan. RHUBARB PUDDING Place 4 cups rhubarb in 8” x 8” pan. Add 1 cup white sugar and 1 teaspoon orange rind. APPLE BROWN BETTY 4 apples 5 tbsp. brown sugar sugar and nutmeg to taste 2 tbsp. butter 6 tbsp. flour METHOD: Cut apples in small pieces and sprinkle with sugar and nutmeg.
