Beat the eggs, add the sugar and flour sifted with baking powder and salt. Add vanilla and rum. Pour this mixture over fruit mixiure, mix well. Press the batter into baking pans. Bake in a slow oven at 300° for 2 hours or until done like any other fruit cake. Mollie Khadiken LIGHTNING CHOCOLATE CAKE 1, Cups all purpose flour 1 Tsp. salt 1¥, Cups white sugar 6 Tbsp. cocoa ¥, Tsp. soda 2/3 Cup soft shortening 2 Tsp. baking powder 1 Cup buttermilk or sour milk 2 Medium eggs Sift the flour, then measure it. Then place your sifter in your mixing bowl and place the flour, sugar, baking powder, soda, salt and cocoa in the sifter. Sift into the bowl. : Have the shortening at room temperature so that it is quite soft. Add this to the sifted dry ingredients in the bowl all at once. Now add the buttermilk, all at once. Next step is to beat all the contenis in the bowl for two minutes. If beaten with an electric mixer beat at medium speed one scrape down the sides of the bowl during mixing. Now add the unbeaten eggs to the batier and beat for another two minutes, either by hand or an electric mixer. Pour the batter into a greased square pan or into two 9” layer cake pans that have been lined with waxed paper. Bake in moderate oven at 350°F. A square cake will require about 45 to 50 minutes and layer cakes will take about 30 minutes to bake. Edith Cazakoff LEMON LOAF Y, Cup margarine Pinch of salt 1 Cup sugar (white) 1 Tsp. baking powder Grated rind of 1 lemon 2 Eggs, beaten 1, Cup sifted flour Y, Cup milk Cream margarine and sugar. Sift flour, salt and baking powder. Beat eggs. Add to margarine mixture and beat well. Add lemon rind and milk and fold in sifted flour. Bake for 45 minutes at 350° in 9 x 5 x 3 inch loaf pan.
