Barbecue Sauce % cup salad oil 1 tablespoon salt 1 cup cider vinegar 1 teaspoon Tabasco sauce 2 tablespoons molasses Combine ingredients in a covered jar and shake well before using. When broiling fish on a barbecue, use this sauce for basting. Turn fish occasionally and baste several times. Makes about 14 cups sauce or enough for 3 pounds of fish. Topping for Fillets 14 cup mayonnaise 1 tablespoon chopped pimiento 2 tablespoons finely chopped green 1 tablespoon lemon juice onion Combine all ingredients. Spread over fillets before baking. Makes sauce for 1 pound of fillets. Sweet and Sour Sauce 1 can (8 ounces) tomato sauce 1% cup cold water *% cup white wine vinegar 1% teaspoon paprika % cup water % teaspoon monosodium % cup sugar glutamate (optional) 1] teaspoon salt ¥ teaspoon ground allspice 2 tablespoons cornstarch Combine tomato sauce, vinegar, water, sugar and salt in a saucepan. Bring to a boil. Dissolve cornstarch in cold water. Add to sauce. Cook and stir until thickened. Stir in paprika, monosodium glutamate and allspice. Makes about 2 cups. 27
