Family Desserts SN Leon_ eee eEOeSE Ee Eee EE Ee EE eS Eee ee eT EE ee APPLE STRUDEL 1 cup of flour 1 egg 3 tablespoons of oil 1% cup of warm water 8 large apples 3%4 cup sugar % cup dried bread crumbs 1 teaspoon cinnamon Beat the egg, oil and water together. Add to the flour, beating with a fork. Knead until very smooth. Roll into a flat shape on a floured board. Cover and let stand for % hour in a warm spot. Stretch out carefully on a clean cloth until paper thin. Sprinkle with 1 tea- spoon of oil, then a mixture of 1 table- spoon of sugar and % teaspoon of cin- namon. Peel, core, and cut up the apples. Mix with sugar, cinnamon and bread crumbs. Cover % of the dough with the apple mixture and roll up. Cut into 3 lengths. Place on oiled cookie sheet. Bake in a 350-degree oven for 25 minutes. —LoTTE NEUMANN BLUEBERRY APPLE PUDDING 1 cup uncooked blueberries % cup white sugar 1 cup sweetened apple sauce 2 tablespoons water (or lemon juice) Batter: 1 cup sifted all-purpose flour % cup white sugar 2 tablespoons shortening 1 egg 1 tablespoon baking powder % to % cup milk Place blueberries in deep pie plate. Sprinkle with sugar and water (or lemon juice). Pour applesauce over berries. Spoon batter on top. To make batter: Sift dry ingredients. Cut in shortening. Add beaten egg and milk. Stir to blend to make soft dough. Bake in moderate oven at 350 degrees for 35 minutes or until done. —HELEN BRADLEY 83 APPLE COCONUT SQUARES 24 cup brown sugar Y% cup butter or margarine % cup sifted all-purpose flour 1% teaspoon salt 1 cup flaked coconut 20 oz. can apple pie filling 1% teaspoon apple pie spice mixture (I prefer cinnamon with a dash of nutmeg.) Grease an 8-inch square cake pan. Blend sugar and butter, then mix in flour, salt and coconut. Pack half of this mixture in pan. Cover with the pie filling. Sprinkle with spice. Top with remaining coconut mixture. Bake in a moderate oven, 350 degrees, for 25 to 30 minutes. Serve warm with whipped cream, ice cream or hard sauce. Makes 8 or 9 servings. — AUDREY FAWCETT LUCILLE’S APPLE TORTE 1 cup sugar 4 tablespoons butter 1 egg 1 teaspoon soda 1 cup flour 1 teaspoon cinnamon Y% teaspoon nutmeg 2 cups apples, chopped fine % cup walnuts 1 teaspoon vanilla Mix in order given and bake in a well greased pie plate about 30 minutes at 350 degrees. Serve with whipped cream. —ELEANOR TARLING LEMON SURPRISE CAKE Prepare 1 package quick lemon pie filling as directed on package. Spread in oblong pan 13 x 9% x 2-inches. Let stand while making cake batter. Heat oven to 350 degrees. Make batter as directed on package of white cake mix, (I use Betty Crocker’s). Mix well and pour batter over lemon filling. Bake 35 to 40 minutes, or until cake springs back when gently touched. Sift con- fectioner’s sugar over top. AND SERVE WARM. —ANNE GARRETT
