GOOD CAKE 2 cups brown sugar 1 tsp. cinnamon 8 cup butter 1 tsp. cloves 2 cups raisins z tsp. nutmeg 2 cups cold water 1 tsp. salt Boil all together for 3 minutes; when cold add 2 teaspoons soda dissolved in a little hot water, 3 cups flour, 1 teaspoon baking powder in sifted flour. Mrs .T. Thulien, Veteran. CHERRY POUND CAKE Standard size loaf tin— line and grease well. = cup butter 5 egg yolks 1 cup white sugar Cream. Add egg yolks. Beat about 5 minutes. Add and beat: Sift and add: 6 tbsp. milk 2 cups all-purpose flour % tsp. almond extract 4 tsp. baking soda 1 tbsp. lemon juice. % tsp. cream of tartar 5 egg whites — beat stiff then fold in batter. 1 or 1% cups cherries — use a little of the 2 cups of flour to dredge ina sieve (this is the secret of cherries “floating’’), returning flour not used to the 2 cups. Pour batter in pan, sprinkle floured cherries over cake evenly and press down—some to middle of cake, none on top of surface. Bake at 375° with water pan underneath for 1 hour and 20 minutes. BOILED RAISIN CAKE 4 cup butter 1 tsp. soda 1 cup brown sugar 1 tsp. cinnamon 2 eggs 1 tsp. cloves 2 cups raisins 1% cups flour Method: Cover raisins with water—simmer and cool. Cream butter and sugar, add eggs. Dissolve soda in cooled raisins and add to first mixture. Add flour and spice mixture last. Pour in greased pan and bake in 250° oven for 30 to 35 minutes.
