MEAT SALAD 2 cups diced cooked meat 2 tablespoons chopped onion or chives 1 cup diced celery Salt and pepper to taste 1/2 cup diced cucumber Mayonnaise or salad dressing Add any two of the following: 1/4 cup diced green or red pepper 1/4 cup chopped olives 1/4 cup chopped pimento 1/4 cup slivered almonds Combine ingredients and season. Mboisten with dressing. Pile lightly on crisp lettuce. Garnish with tomato wedges. 4 to 6 servings. MEAT, CABBAGE AND CHEESE SALAD 2 cups diced cooked meat 1 1/2 cups diced unpeeled cucumber 1 cup shredded cabbage 1/2 cup thinly sliced green onions 1 cup diced Cheddar cheese 1/4 cup diced green pepper Mayonnaise or salad dressing Combine all ingredients. Toss lightly together. Moisten with dres- sing and blend well. 6 servings. CRUNCHY PORK SALAD 1/2 cup chopped mushrooms 1/4 cup diced unpeeled apple 1 tablespoon butter 3 tablespoons slivered toasted 2 cups diced cooked pork almonds (optional ) 1 cup diced celery Mayonnaise or salad dressing 2 tablespoons diced green pepper Salt and pepper to taste Sauté mushrooms in butter until lightly brown. Drain and cool. Combine with other ingredients, add enough dressing to moisten. Season to taste. 4 to 6 servings. HAM SALAD 2 cups diced, cooked ham 1/4 cup chopped pickle 2 hard cooked eggs, chopped 1/4 cup salad dressing 1/2 cup cooked peas Salt and pepper to taste Toss all ingredients together. Serve on lettuce with radishes and green onions. 4 to 6 servings. CHICKEN JULIENNE SALAD 2 cups cooked chicken cut in 1 inch strips 2 cups red skinned apples cut in 1 inch strips 2 cups celery cut in 1 inch strips 1/3 cup French dressing Toss ingredients together with dressing. Chill for about 1 hour. 6 servings. 11
