Doucltry ROAST CHICKEN Prepare chicken for roasting and stuff, sewing with cord or fastening with skewers. Push legs back and tie to body. Bend neck and tie firmly. Pre-heat roaster and sear chicken thoroughly on all sides. Cover roaster, and when vapor appears lower heat and cook for 45 minutes. Turn chicken, reseal roaster and cook for another 45 minutes. Reduce heat and cook for one hour or until meat is tender. Remove chicken to open pan or tray, place in hot oven at 450 degrees for 20 to 30 minutes or until well browned. Meanwhile make the gravy in roaster previously used. POULTRY STUFFING 1 loaf bread crumbs. 11% tsp. salt. 1 onion, chopped. 1 well beaten egg. 1 cup celery, diced. l4 cup butter. 2 tbsp. chopped parsley. Giblet stock. 1% tsp. poultry seasoning. Melt butter in skillet, add onion, and brown. Mix bread crumbs, add brown onions, celery, parsley, seasoning, egg and enough giblet stock to moisten, Mix lightly. For varying the. above stuffing you might substitute for some of the bread, one of the following: chopped giblets, cracker crumbs, oysters, sausage meat, mushrooms or cooked rice. | FRIED CHICKEN Cut frying chicken into serving pieces, rinse in cold water and drain. Rub with salt and coat thickly as possible with flour. Pre-heat skillet with 6 tablespoons of oil and 2 tablespoons butter. Brown chicken well on all sides. Arrange in skillet and cover quickly and cook over low heat for about two hours. Turn fire off 5 minutes before making gravy. MILK GRAVY 2 tbsp. chicken drippings. 2 cups milk. 4 tbsp. flour. Pepper to taste. 14 tsp. salt. Place fryer over medium heat. Add flour and seasoning and blend well. Add milk and continue cooking until gravy is thick and smooth. CHICKEN A LA KING 4 tbsp. butter. 6 cup cream. 4 lb. mushrooms, sliced. 3 cups diced chicken. 4 cup chopped celery. 4 green pepper, chopped. 4 tbsp. flour. 2 egg yolks, beaten. 2 cups milk. Salt and pepper to taste. Melt butter, add celery and mushrooms, and brown. Blend in flour and milk and cream slowly and stir until thick and smooth. Add chicken and green pepper. Simmer over low heat until chicken is heated through. Add eggs, seasoning. Serve piping hot.
