APPLE ’N RAISIN COOKIES 3, Cup grated apple 1 Cup raisins, chopped 1 Cup shortening 2 Cups brown sugar 1 beaten egg 1 Tsp. vanilla 2%, Cups pre-sifted flour 2 Tsp. baking powder 1 Tsp. salt Y¥, Cup milk ¥, Cup orange juice 1 Tbsp. grated orange rind Blend apples and raisins and set aside. Cream together shortening and brown sugar, beat in eggs. Add vanilla. Sift together flour, baking powder and salt. Add to creamed mixture alternately with mixture of milk, orange juice. Add apple-raisin mixture and orange rind. Drop from teaspoon onto greased baking sheets. Bake in preheated 350° oven for 12 to 15 minutes. Yield: 5 dozen cookies. Cream shortening, add sugar, mix well. Add eggs, stir in sifted dry ingredients. Add vanilla. Add cream if dough is toethick. Roll dough to ¥, inch thick. Spread cooked raisin or date filling on half of dough. Fold over dough to cover filling. Cut into squares and bake. Bake in 375° oven for 15 minutes or till done. Put butter into the dry ingredients and rub in well. Add the nuts and raisins. Beat the eggs well with the sour cream. Add the eggs and cream mixture to the flour mixture and mix well.
