Caper and Egg Sauce 2 tablespoons butter or other fat 1 cup milk 1% tablespoons flour 2 tablespoons capers 1%4 teaspoon salt 1 hard-cooked egg, chopped Few grains pepper 2 teaspoons lemon juice Melt fat and stir in flour, salt and pepper. Add milk gradually and cook and stir until thickened. Add remaining ingredients and combine gently. Makes 14 cups sauce. Blue Cheese Basting Sauce 1% cup crumbled blue cheese ¥% teaspoon pepper % cup salad oil \4 teaspoon paprika Y% cup lemon juice Combine all ingredients in a covered jar and shake well before using.
