CABBAGE ROLLS | Filling: 1 pound ground beef 1 teaspoon salt 1 onion 1/4 teaspoon pepper 2 eggs 1 large head cabbage 1/2 cup raw rice ‘wi Sauce: 1 large can tomatoes 1/2 cup brown sugar 1/2 cup water - Salt to taste Juice of 2 lemons Grate onion into meat and mix in eggs, rice, salt and pepper. Parboil cabbage leaves and fill each leaf with meat mixture. Roll up. Put sauce ingredients into large pan. Bring to a boil. Drop cabbage rolls into sauce. Cover. Bake in moderate oven 350 deg. F., for about 2 hours or until done. Remove lid the last 30 minutes of cooking. Serves 6. i~ PIQUANT MEAT LOAF 1-1/2 pounds ground round steak 1 teaspoon dry mustard 1/2 pound ground lean pork 2-1/2 teaspoons salt 1 clove garlic, minced . 2 eggs 1/2 cup chopped green pepper tablespoon Worcestershire Sauce 1 tablespoon chopped celery leaves slices soft bread, cubed ( or parsley) cup warm milk 1/4 teaspoon pepper | =—rR— Soak bread in warm milk. Combine other ingredients. Pack firmly into loaf and place in 350 deg. F. oven for 20 minutes. Remove from pan and put in greased shallow pan. Baste with 1/2 cup boiling water. Replace in 350 deg. F. oven and baste every 15 minutes for about 1 hour longer. Serve with: Piquant Sauce: . 8 ounces tomato sauce 1 tablespoon Worcestershire Sauce 2 tablespoons horseradish . Tabasco sauce ‘ Combine ingredients. and heat through. A few shakes of tabasco give zip and can be added to taste. Serves 6. Y“ CHILI CON CARNE 3 large onions, chopped fine Chili Con Carne seasoning, to taste 2 cloves garlic, crushed 1 (No. 2) can tomatoes 2oez = 272 ¢ ups, 1/4 cup salad oil Dash salt 1/2. cup finely chopped green pepper 3 cups cooked kidney beans or 1 pound ground round beef 1 (No. 2-1/2)can kidney beans 2 tablespoons chili powder OR Fry onions and garlic in salad oil until lightly browned and tender. Add green pepper and beef. Fry until wéll-browned. Sprinkle chili powder over all. If you use chili powder, add a sprinkling of cumin, oregano and a dash of tabasco. If you use the special chili seasonings, these additional spices are not required. Add tomatoes and salt. Cover. Simmer for about 1 hour. Add the kidney beans and heat. Serves 6. If you like a dark color, add a shaved square of bitter chocolate. Chili can be made, chilled and reheated the next day. The flavor seems to improve with standing. PORCUPINE MEAT BALLS 1-1/2 pounds ground round or chuck beef 1/4 cup finely diced onion 1/2 cup raw rice 1 peeled garlic clove, minced 1 teaspoon salt 1 can tomato soup Few grains pepper 1 cup water Combine ground meat, rice, seasonings, onion and garlic. Shape into balls. Put tomato soup and water into bottom of the pressure cooker. Place the meat on arack. Cook at 15 pounds pressure for 15 minutes. To cook without pressure cooker, simmer meat balls in tomato sauce about 45 minutes. Serves 6. 19
