COCOA FRUIT TARTS

Three-quarters butter, one cup sugar, two eggs, half cup milk, one and
a half cups flour, three level teaspoons baking powder, three tablespoons
Cowan’s cocoa, quarter teaspoon salt, one eighth teaspoon cinnamon, one
teaspoon vanilla. Cream butter, add sugar gradually, add egg yolks thor-
oughly beaten, mix and sift dry ingredients three times, add alternately
with milk, add vanilla. Fold in egg whites beaten until stiff and dry, turn
into greased and floured patty. pans and bake thirty minutes in a moderate
oven, cool, scoop out centre, fill with date filling and cover with whipped
cream. Tested and approved—Cowan Coy.
