98 THE BLUE BIRD CooK BooK HAM LOAF 1 Ib. ground smoked ham Y2 cup milk Yq |b. ground veal 1 cup bread crumbs Y Ib. ground fresh pork shoulder, 1 large egg, beaten fat removed 1 small onion, grated Mix and put in greased loaf pan. Bake at 350 degrees for 30 to 40 minutes or until it comes away from edge of pan. Sauce to Pour over Loaf 1 tablespoon butter 1 teaspoon dry mustard 1 tablespoon flour WY cup vinegar Y cup sugar 1% cup tomato juice 1 egg slightly beaten Melt butter, add flour and stir well. Add remaining ingredients, stirring well to keep it from curdling, and lastly, add the egg. Cook until thick. Spoon over ham loaf when serving. (Half recipe can be used). WILD RICE Wash 1 cup wild rice and cook in double boiler with 1 can of consomme and Y cup water for 3 hours. Chop 1 large onion and fry slowly in 4% lb. butter. Do not brown. Add 1 teaspoon worcestershire sauce, 1% teaspoon dry mustard, 3 teaspoons salt, 1 teaspoon pepper, 1 can of mushrooms, drained. Mix in with rice in double boiler. Serve hot. Nice with pheasant or duck. BARBECUED SPARERIBS 4 Ibs. spareribs 8 servings Cut ribs into he-man-size portions. Place on broiler pan and brown on both sides. Place in roaster on rack so ribs are not in cooking juices. Add enough water to cover bottom of pan to keep pan from burning. Barbecue Sauce Heat 1 bottle barbecue sauce 2 tablespoons worcestershire 1 cup vinegar sauce Baste spareribs well and often with sauce using large spoon. Cook until ribs — are tender. Allow 1% hours for broiling and roasting. SPARERIBS IN WINE 4 lbs. spareribs, cut into 2/3 cup dry sherry serving pieces 2/3 cup brown sugar, packed 3 tablespoons red wine vinegar Y4 cup soy sauce Arrange spareribs in a single layer in a large shallow baking pan. Mix — remaining ingredients and pour over ribs. Bake uncovered in 325 oven for about 1% to 2 hours turning and basting frequently. DINNER IN A BASKET Butter large sheet heavy duty foil 2 Ibs. lamb, chicken, stewing beef 1 envelope dehydrated onion soup or veal 3 tablespoons apple juice or wine Butter the large piece of foil lightly, spread half the package of soup on foil, Arrange meat (cut into serving pieces) on top and sprinkle remaining soup over meat. Fold foil to seal. Add juice before folding. Do not add salt or pepper. Bake 1 hour at 375 degrees for beef, lamb or chicken; 1% hours for veal. PUMPKIN FACE CANAPE FOR HALLOWE'EN Cut rounds from thin slices of bread and toast one side. Spread the plain side with butter or cream cheese. Make a face with currant eyes and nose and a small mouth of cherries.
