Cakes «3! 25 CARAMEL CAKE Put 1 cup of brown sugar in an iron saucepan, stir over a slow fire until the sugar softens, then melts and finally becomes liquid and throws off an intense smoke. It really must burn. Have ready 2 cup boiling water. Remove saucepan from fire for a moment, throw in the water and stir rapidly and allow it to boil until you have a molasses-like syrup. Bottle it up and put away, as this is enough for several cakes. Ya cup butter 3 teaspoons caramel syrup 1% cups sifted sugar 1 teaspoen vanilla 1 cup cold water 2 teaspoons baking powder 3 egg yolks (well beaten) 2 egg whites (well beaten) 2 cups sifted flour Cream butter, add sugar gradually, add water and egg yolks; add flour and beat about 5 minutes; add syrup and vanilla and beat again, then stir in carefully the baking powder and well beaten egg whites. Bake in 2 or 3 layers at 375 degrees— do not open oven for 20 minutes. For icing, use boiled icing recipe, adding caramel until the desired color. Boiled Icing 1 cup granulated sugar 1 egg white 3 tablespoons cold water Y% teaspoon cream of tartar Cook in double boiler beating constantly for 7 minutes. CHERRY AND CITRON CAKE 2 cups flour (measured 2 eggs before sifting) 1 cup milk 2 teaspoons baking powder Vanilla 1 cup white sugar Y2 cup cherries Y2 cup butter 3% cup citron Sift flour, sugar and baking powder 4 times. Work butter in as for pastry. Add eggs, milk and beat 20 minutes. Add vanilla, chopped cherries, then citron and bake in moderate oven (350 degrees). Ice with boiled white icing. CHOCOLATE CAKE ee 1/3 cup cocoa Y2 cup sour milk | VY cup butter 1 teaspoon soda \ Y cup hot water (scant) 1 cup flour (large) 1 cup sugar Pinch of salt 1 egg i 1 teaspoon vanilla Mix in order given, breaking egg into mixture. This is nice baked in an angel- cake tin. It is economical, quickly made and never dry. Bake at 350 degrees. ALMOND ICING (For Fruit Cake) 1 Ib. ground almonds 2 eggs beaten 2 Ibs. icing sugar . Vanilla Orange juice enough to make soft ball. Squeeze juice from one orange and brush on cake before applying icing. Place roll of icing on top of cake and gently press down the sides. CRUMB CAKE 2 cups brown sugar 1 whole nutmeg grated, 3 cups flour (1 tablespoon) VY. cup butter 1 teaspoon cinnamon Ya cup lard Salt Rub above ingredients together. Save 1 cup for top of cake. Add 2 eggs, 1 cup sour milk or buttermilk, 1 teaspoon soda. Sprinkle cup of crumbs on top and bake. No icing required. Bake at 350 degrees for 25 minutes.
