PREFACE.

HIS book is intended for use in the teaching of foods

and cookery in the elementary and junior high schools.

It is primarily a recipe-book, but includes some facts _—--
about food as well as the principles and methods of pre-
paring and serving food. Because of the close relation
between health and careful food preparation, it is to be
hoped that this book may stimulate in the students a keener
interest in better food standards.

adapted to the work in school with the thought of economy Se
through the use of least expensive materials. They are ‘
reliable, the portions given in each recipe are, generally. —
speaking, sufficient for the average family of six, and
may be used satisfactorily in the home kitchen.
