~ za . “<- , ’ : 4 { niece ee mS FLUFFY PEACH RICE PUDDING 1 10 oz. can peach halves 2% cup milk % cup water 1 egg yolk lightly beaten % tsp. salt % tsp. vanilla 1 cup minute rice l egg white 1 pkg. vanilla pudding 1 tbsp. sugar Measure % cup peach juice into saucepan. Dice peaches and set aside. Add water and salt to peach > gusce. Bring to a boil. Stir in rice. | Cover, remove from heat and let stand 5 minutes. Add pudding mix,. milk and egg yolk to rice in Saucepan. Cook and stir over medium heat until mixture comes to a full boil (about 5 minutes). Cool 5 minutes, stirring once or twice. Stir in vanilla. feanwhile, beat egg white until foaming. Add sugar and beat until mixture will stand in peaks. Gradually fold hot pudding into egg whites. Fold in diced peaches. Serve warm, or cool pudding to room temperature and chill 1 hour before serving. Makes 6 - 8 servings. Mrs. Marge Wheeler
