Add seasoning and cover with water. Simmer 21 hours. DELUXE SHEPHERD PIE f 1% Ibs. hamburger 1 cup hot potato water 3% teaspoon salt 3 cups cooked mashed potatoes Y teaspoon pepper 1 tablespoon margarine 2 tablespoons shortening Yq teaspoon pepper 4 tablespoons chopped onions Y2 cup instant milk powder 1 tablespoon flour Y% cup potato water 3 tablespoons instant powdered 1 can undiluted mushroom soup milk 1 cup buttered bread crumbs Boil potatoes. Drain and save the water. Mash potatoes till smooth. Fry onions in shortening gently, then add hamburger and cook till brown and crumbly. Add flour, salt and pepper and the 3 tablespoons skim-milk powder. Stir till smooth then add 1 cup hot potato water and cook till thickened. Put this meat and gravy in a large casserole. Spread undiluted mushroom soup carefully over meat and gravy, taking care not to mix it into the meat. Whip cooked potatoes (use 6 medium-sized) until light and fluffy. Add margarine, salt, pepper, Y2 cup milk powder and 4% cup potato water. Mix and whip thoroughly. Drop by — spoonfuls on top of soup and spread carefully with a fork. Sprinkle top with buttered — crumbs. Bake at 400 degrees for 20 to 25 minutes. Can be prepared ahead and ~ kept in refrigerator till time to bake. BEEF MUSHROOM LOAF 2 Ibs. ground beef 4-oz. can mushrooms, stems and 3% cup milk pieces 1% cups crushed cornflakes Y cup catsup (optional) 1'2-o0z. pkg. dehydrated onion soup 2 eggs, beaten Mix all ingredients. (If catsup is not used then add more milk). Pack in loaf tin. Bake 1Y%2 to 134 hours at 300 degrees. SAUERBRATEN (SOUR BEEF) 4 lbs. beef, rump or chuck 2 cups water 1 large onion 1 teaspoon peppercorns 3 bay leaves Y% cup brown sugar 2 cups vinegar 1 tablespoon salt Sprinkle meat with salt and pepper. Place heated vinegar and water and spices, onions and brown sugar in large crock. Place meat in this mixture for three days. Turn meat occasionally. Cover meat and keep in cool place. Take meat out at the end of three days. Brown in kettle and cover with onions and add some of the strained liquid. Cook slowly until tender for about 3 hours. Serve with noodles. Use the gravy in kettle. MEAT LOAF (VERY MOIST) 1 Ib. ground beef (chuck 3% cup bread crumbs steak is good) Y2 teaspoon sage Saute in bacon fat, 1 onion and Salt and pepper to taste about 3 pieces of celery 1 cup milk, heated (chopped) Mix all together. | TOPPING: 1 can tomato sauce (Spanish style), 1 teaspoon dry mustard, 2 table- spoons brown sugar. Put over loaf. Bake 45 minutes at 350 degrees. |
