BREAKFAST DISHES 21 ORANGE TOAST Y cup sugar 1 orange Grate rind and mix with sugar, add enough juice to make it spread well. Spread on hot buttered toast and place under flame to melt the sugar. Serve at once. CINNAMON TOAST Toast medium thick slices of bread and when just brown enough, butter lavishly. Have ready a mixture of two parts granulated sugar to one part cinnamon. Shake or sprinkle as evenly as possible. Put in warming oven for a minute or so and serve covered with a napkin to keep from cooling. MUFFINS 1 tablespoon butter 1% cups flour 1 tablespoon sugar 1 teaspoon baking powder 1 egg Salt 1 cup milk Bake in muffin tin in quick oven. BREAKFAST MUFFINS Sift 3 cups flour and 1 teaspoon salt into bowl. Beat together the yolks of 4 eggs with 6 teaspoons sugar and 1 tablespoon melted butter or lard; dissolve ] even teaspoon soda in a little lukewarm water, add to 1 pint sour milk; pour into bowl with other ingredients. Beat all together and then add the well beaten whites of eggs. Have muffin tins well greased and heated, fill half full of the batter and bake in a quick oven—425 degrees. (DEM.) WAFFLES Beat the yolks of 2 eggs very light, 2 tablespoons butter softened and beaten in. Sift 2 cups flour with 2 teaspoons baking powder, little salt and 2 cups milk. Beat all together for 2 or 3 minutes. Just before frying, add the stiffly beaten whites of 2 eggs. ‘‘The pan may wait for the waffles, but the waffles must not wait for the pan’’. QUICK COFFEE CAKE 1 cup flour Ya teaspoon salt 1/3 cup sugar Y2 teaspoon cinnamon 3 teaspoons baking powder Mix all together then add: Ya cup milk | 3 tablespoons melted butter ' 1 beaten egg Spread in greased shallow pan and sprinkle over the top 1% cup sugar and 1 tea- spoon cinnamon mixed. Raisins may also be added to dough or just before placing in oven; thin sliced apples or peaches may be stuck on top. Bake at 450 degrees 20 to 25 minutes. INDIVIDUAL COFFEE CAKES 3 tablespoons sugar 4 tablespoons shortening 2 cups flour Y cup milk 3 tablespoons baking powder 2 eggs Salt Mix dry ingredients with shortening, work in well, then add wet ingredients. Roll with fingers in the shape of a small crescent. Place on greased pan, brush with butter and bake—400 degrees for 15 minutes. When done spread with a thin water and sugar icing, and sprinkle with nuts, chopped fine. Makes 17 crescent-shaped rolls.
