39 LACY BUTTER COOKIES Jessica Hoogland 1 ce softened margarine or 3 T. flour butter 1/2 tsp. salt 2 1/4 ce brown sugar l egg, slightly beaten 2 1/4 ce oatmeal 1 tspe vanilla Mix dry ingredients, then stir in melted butter. Blend in beaten egg and vanilla. Mix well, drop by small tablespoon onto cookie sheet. Place far apart, 6 to a sheet. This makes a very thin lacy cookie. Bake for 7 minutes in a preheated oven at 375°. Cool slightly before removing from sheet. SPICY CUT OUT COOKIES Lana Verdonk 1 1/2 c. butter or margarine 2 tsp. cinnamon 2 Ce brown sugar 1 tsp. nutmeg l egg 1/2 tspe cloves 4 ce. flour 1/4 tspe baking soda © Mix as usuale Cover and chill about 2 hours. On floured surface, roll out 1/8 inch thick and cut. Bake on ungreased cookie sheet at 350° for 8 to 10 minutes. Cool 1 to 2 minutes. Remove to wire rack. Cool completely. Can be decorated with decorator icing. Makes 6 dozen. SPECULAAS CUT OUT COOKIES Linda DeJong 1 ce brown sugar 3/4 tspe ginger 3 ce flour 3/4 tsp. nutmeg 1 ce butter 3/4 tspe cloves 3 T. milk 1/4 tspe salt 1 1/2 tspe cinnamon 1/8 tsp. baking powder Mix as usual and roll dough 3/8 inch thick and use cookie cutters. Bake at 350° for 12 to 15 minutes. Store in Tupper- ware. Frost with peppermint frosting.
