BOILED RAISIN CAKE (CHEAP) % cup butter 1 cup brown sugar 1 egg 1 tsp. baking soda 14 tsp. ground cloves 14 tsp. cinnamon 1 cup raisins 1144 cup flour salt Boil raisins with water to cover for 20 minutes. Add spices and cook for few minutes. Pour off % cup liquid and let it cool and use for cake. Use usual method for mixture of cake. QUICK CAKE 1 cup sugar 14 cup butter 1 cup sour milk 1 tsp. soda 1 cup flour 1 egg 2 heaping tablespoons cocoa 14 tsp. vanilla Cream butter and sugar, add egg. Dissolve soda in milk. Sift flour and cocoa together. Alternate milk and flour mixture. Add vanilla. Bake in moderate oven (350°) about 30 or 40 minutes. MRS. N. J. LINTON. APPLE SAUCE CAKE 134 cups Swans Down flour 1 tsp. soda 1% tsp. salt 1 tsp. cinnamon 14 tsp. cloves 14 cup butter 1 cup sugar 1 egg 1 cup raisins 1 cup nuts 1 cup hot thick apple sauce Cream butter and sugar, add egg. Sift spices, soda and flour 3 times. Alternate apple sauce with flour mixture. Last add raisins and nuts. Cook in moderate oven 350° 30 or 40 minutes. MRS. G. W. TUCKETT. SPICED APPLE CAKE 4 cup shortening 1 tsp. salt 142 cups sifted brown sugar 1 tsp. baking soda 1 egg well beaten 1 tsp. baking powder 1 cup raisins 1 tsp. nutmeg 1 cup walnuts 1 tsp. cinnamon 1 cup thick cold applesauce 14 tsp. allspice 134 cups flour Flour the fruit and nuts with % cup of the measured flour. Mix same as a butter cake, adding the sifted dry ingredients to the butter, egg and sugar mixture, alternately with the applesauce.
