FISH, FOWL & MEAT BEEF AND GREEN PEPPER 3 tablespoons oil 1% pounds sirloin steak, cut in slivers Y4 teaspoon seasoned salt 2 tablespoons soya sauce 1 clove garlic, chopped fine Pepper to taste 2 green peppers, cut in wedges 2 tablespoons red wine 1 cup sliced onion 1 teaspoon ginger Mix soya sauce, pepper, wine and ginger with 1 tablespoon water. Set aside. In another bowl mix 4 tablespoons water with 2 teaspoon soya sauce and 114 table- spoons cornstarch. Heat oil, add salt, garlic and meat. Fry 3 minutes, add onion, green pepper, and fry one minute longer. Add soya sauce mixture, stir and cook 4 minutes, then add second mixture stirring till smooth and thick. Serve at once. Mary Ogilvy BRAISED PORK CHOPS CREOLE 6 pork chops 2” or more thick 34 cup minced onion 1 can tomato soup (10% oz.) %, teaspoon salt 1 can water or stock Y, teaspoon paprika % cup chopped celery Crushed cornflakes 1 chopped green pepper — (seeds & membrane removed) Dredge chops in flour and brown in hot fat or oil. Place in baking dish. Mix sauce ingredients together, heat, and pour over chops. Bake at 350°, covered, for about 1% hours, removing lid last 15 minutes and covering top with crushed cornflakes. Sadie Impett PINEAPPLE PORK CHOPS 4 thick chops, trimmed _ 2 tablespoons vinegar % cup flour 1% tablespoons cornstarch 1 teaspoon salt % teaspoon ginger % teaspoon pepper 1/8 teaspoon allspice 4 thin slices lemon Y cup raisins 4 thin slices onion 2 tablespoons soya sauce 1 (15 oz.) can crushed pineapple / ( ) pineapple yp cup bsatw Add salt and pepper to flour and coat chops. Brown and place in pan with a slice of lemon and onion on each. Sauce: Y4 cup pineapple juice mixed with vinegar, cornstarch/and spices. Add raisins and soya sauce. Cook until clear.
