Mix until smooth, roll thin, cut out with round glass or a cutter and start folding your Varenniki. Add sifted salt, sugar and flour while beating for 5 minutes. Add soda in remaining hot milk and pour over batter, beat 5 minutes. Let stand for 10 minutes till cooled, add baking powder, mix well, let stand a few minutes, pour by ¥, cup full and spread over skillet and bake at 375° till nicely brown. Serves 4 to 6 persons. lrene Reiben BLEENI 2, Cups warm milk Y, Cup potato water ¥, Cup well mashed potatoes 1 Tsp. sugar 2 Eggs beaten 1 Heaping tsp. yeast 2 Cups flour (unsifted measure) 1 Rounded tsp. baking powder 1 Tbsp. salt About 12 or 14 hours before serving prepare as follows: Heat milk till warm NOT HOT, add beaten eggs, salt, flour and mashed potatoes. Dissolve sugar in potato water, add yeast and soak. Then com- bine with milk and flour mixture. Allow to stand in warm place for 1% hours, stir, repeat this two more times. Then allow to stand at room temperature. When ready to bake, stir batter well, and add baking powder. Pour by ¥, cup of batter into a greased hot large sized fry pan 11 x11 inches, use less batter if a smaller pan or griddle is used, tilt pan till batter is spread all over. Bake till edges can be lifted and bottom is browned, taking hold of edges, lift carefully, flip and allow to bake a few seconds. Remove by edges, butter well.
