Time: 40-45 minutes 3 tablespoons butter 1 egg, unbeaten 1g cup brown sugar 1 cup sifted pastry flour 6 or 8 peach halves 114 teaspoons baking 14 cup shortening powder 4 cup white sugar 14 teaspoon salt 14 teaspoon almond flavoring %% cup milk Melt the butter in the bottom of an oiled pan 8” x 8". Add the brown sugar; Llend well; press the peach halves into the mixture. Cream together the shortening, white sugar and flavoring. Add the unbeaten egg; beat till light and fluffy. Add the sifted dry ingredients alternately with the milk. Beat lightly; pour over the peach halves. Bake in a moderate oven till done. While still warm invert on a cake cooler. Cut into squares; serve hot with Nutmeg Sauce. Serves 6. PINEAPPLE UPSIDE-DOWN CAKE Temperature: 325°F. Time: 35-40 minutes 8 slices fresh pineapple l4 teaspoon salt 14 cup butter 4, eggs, separated 14 cup brown sugar 1 cup white sugar 8 maraschino cherries 1 tablespoon melted 1 cup sifted cake flour butter 1 teaspoon baking powder _—'/% teaspoon vanilla Slice the pineapple; remove the core and skin. Melt 14 cup butter in a 9” square pan; add the brown sugar; stir over gentle heat till dissolved. Press the pineapple slices into this mixture; insert a cherry in each core. Sift together the flour, baking powder and salt. Beat the egg yolks till light and lemon colored; gradually beat in half the white sugar. Add 1 tablespoon of melted butter and the vanilla. Beat the egg whites till stiff; gradually beat in the remaining )4 cup of white sugar. Combine the two mixtures. Fold in the sifted dry ingredients. Pour over the pineapple mixture; bake in a fairly moderate oven till done. Invert on a large platter; serve warm. Serves 8. PRUNE UPSIDE-DOWN CAKE ‘Temperature: 350°F.
