young birds and old ones in the same roasting pan she ends up with some birds too well done while the others are tough. In Manitoba you have an adult bird when the last two wing feathers are new. You can tell if they are new because they will be shorter than the other feathers in the wing. (See Figure 17.) Waterfowl Turning to waterfowl we find a little different situation. Ducks and geese seem to be able to stand rougher treatment. However, in the early part of the season when the weather is warm you may find your diving ducks β€” redheads, canvasbacks, scaup, goldeneye, ringnecks, mergansers and buffleheads β€” turning green pretty fast. Our advice for all waterfowl is clean them right away. Actually it’s not a big job and since it has to be done it might as well be done sooner than later.
