Use whites of eggs for mer- ingue Thelma Cole (Dawson 53B). EGGNOG PIE Prepare and bake a 9” pie shell. Beat slightly 4 egg yolks with % cup sugar and a pinch of salt. Scald 1 cup milk and add slowly to egg mixture. Cook in double boiler until of custard consistency, stirring constantly. Soften 1 envelope unflavoured gelatin in % cup cold water. Add to hot custard, stirring until gelatin is dis- solved. Flavour with 3 teasp. rum extract. Chill until mixture begins to thicken. Beat 4 egg whites stiff (not dry) gradually adding 1/3 cup sugar. Fold into cooled custard, fill baked shell and chill until set. To serve cover with whipped cream and sprinkle with nutmeg. Thelma Cole (Dawson 53B). CANDY HOME-MADE MARSHMALLOWS 2 envelopes unflavored 3% cup boiling water Knox gelatin % teasp. salt 1% cup cold water 1 teasp. vanilla 2 cups white sugar Boil sugar and boiling water until syrup tests thread stage (thread forms when dropped from edge of silver spoon). Remove from heat. Soften gelatin in cold water. Add to hot syrup and stir until dis- solved. Add salt and vanilla. Beat with mixer until thick, fluffy, and cold. Pour into pans (8x4 ins.) thickly covered with icing sugar, having mixture at least 1” deep. Let stand in cool place (not frig.) until thoroughly chilled. With a wet, sharp knife loosen around edges of pan and turn out on board covered with icing Sugar or unsweetened cocoanut. Cut in cubes and roll in cocoanut.
