COWAN’S COCOA SPONGE CAKE

Yolks of four eggs, one cup sugar, three tablespoons cold water, three-
quarters cup flour, one teaspoon vanilla, five tablespoons Cowan’s cocoa,
two teaspoons baking powder, quarter teaspoon salt, whites of four eggs,
quarter teaspoon cinnamon. Beat yolks of eggs and water until thick and
lemon colored, add sugar gradually and beat three minutes, mix and sift
flour, cocoa, baking powder, cinnamon and salt three times, add to egg and
Sugar mixture, mix thoroughly, beat egg whites until stiff and dry, fold in
above mixture and add flavoring, turn into a buttered and floured pan and
bake thirty minutes in a modern oven. Cover with Cowan’s cocoa frosting.
