MEATS 101 HAM LOAF 1 Ib. ground smoked ham Y2 cup milk Y% Ib. ground veal 1 cup bread crumbs Y_ Ib. ground fresh pork, 1 large egg, beaten shoulder fat removed 1 small onion, grated Mix and put in loaf pan. SAUCE TO POUR OVER LOAF: 1 tablespoon butter, 1 tablespoon flour, % cup sugar, | egg slightly beaten, 1 teaspoon dry mustard, 4% cup vinegar, 1Y2 cups tomato juice. Melt butter, add flour and stir well. Add remaining ingredients and lastly the egg. Cook until thick. Half of the recipe can be used. PEPPER STEAK 1 flank steak (about 11% Ibs.) 3 tablespoons soy sauce cut in wide strips 1 beef bouillon cube 2 tablespoons lard or oil Ye teaspoon pepper 1 tablespoon flour 1 large onion sliced in rings Y2 cup catsup 2 green peppers sliced in rings Y2 cup water 1 tin sliced mushrooms Brown meat in the fat in large frying pan or dutch oven. Remove from heat. Take out the meat and pour off extra fat. Stir in flour, catsup, water, soy sauce, bouillon cube and peppers. Heat to boiling. Add browned meat strips and onions. Cover and simmer 30 minutes or until meat is tender. Then add green peppers and mushrooms and the juice. Simmer 10 to 15 minutes. | cook longer. Pepper rings should not be cooked too long. Six servings. SWEDISH MEAT BALLS Ya Ib. lean chuck beef, ground Ya teaspoon nutmeg 1 egg, beaten 1 tablespoon minced onion 1 teaspoon salt 3 medium onions sliced 1 teaspoon pepper very thin 4 slices day-old bread 2 tablespoons fat Mix together beef, egg, salt, pepper, bread, nutmeg, minced onion, and let stand 5 minutes. Saute sliced onions in fat until golden brown, remove and drain. In same fat brown small meat balls. Place meat balls in casserole, and pour cream sauce. Take drained sliced onions and spread over top. Bake, covered for 30 minutes. Serves 4. CREAM SAUCE: 2 tablespoons flour, 1 teaspoon salt, Yg teaspoon pepper, 2 cups milk. Mix ingredients together and cook until thick. SPANISH POT ROAST 3 to 4 lb. chuck roast 2 teaspoons oregano 2 tablespoons fat 1 medium onion, chopped 1/3 cup flour Clove garlic minced 1 cup tomato juice Salt and pepper 1 green pepper or chili pepper 1 cup red wine 1 bay leaf Heat fat in heavy skillet. Rub roast with flour, mixed with salt and pepper. Brown on all sides. Add onions and brown lightly. Add 1 cup tomato juice and wine, then rest of ingredients. Simmer gently 3 to 4 hours. Add more tomato juice if necessary during cooking. Turn occasionally, to prevent sticking. Serve with large noodles, covered with roast gravy. PLANKED STEAK (For those who can’t eat heavily seasoned food) Round steak cut 1 Y% inches thick, sufficient for family. Lay on meat board and sprinkle with meat tenderizer, and let stand for Y2 hour if possible. Sprinkle with onion salt and a little pepper. No other salt needed. Pound a few teaspoons of flour into each side, cut into pieces for serving. Heat a heavy fry- pan or electric frypan. Put in tablespoon of butter, and when hot, brown meat well on both sides. Turn heat lower and add a little water at intervals. Cook until tender, | | !
