CHICKEN CHOW-MEIN 1 Can chicken chow-mein 2 Cups sliced celery 1¥, Package chow-mein noodles 2 Large onions (diced) 4 Lb. stewing chicken 2 Green peppers cut thinly 4 Cups shredded cabbage Add 6 cups water to cut-up chicken and let simmer in the oven at 350° for 3 hours. Drain and save broth. Cut up the meat fine, steam vegetables in 14% cup water on low heat till soft. Combine ingredients including broth Flavour to taste. Y, Tsp. ginger /, Cup soya sauce ¥, Tsp. garlic powder 1 Beef bouillon cube In medium bowl combine soya sauce, beef cube, ginger, garlic powder, 1 cup boiling water, add beef strips, cover and refrigerate about 1 hour and 15 minutes. Drain meat, saving ¥, cup liquid. In large skillet over high heat, cook meat in 2 tbsp. shortening until it loses red color, add reserved liquid and 1 cup water. Reduce heat and simmer about 20 minutes. Add 4 green peppers cut in strips and 1 large onion. Cook 15 minutes. Thicken with corn starch and serve with rice. Sandra Makasoff MEATLESS CABBAGE ROLLS 2 Cups rice Salt and pepper to taste 1 Quart tomatoes (cooked) Y, Lb. butter 4 Medium onions 1 Big head of cabbage Fry onions with ¥, Ib. butter and set aside. Pour boiling water over cabbage and let stand for a few minutes until cabbage leaves are just soft enough to fold. Cook rice to boiling point, drain and mix with fried onion. Put salt and pepper to taste. Put onion and rice mixture on cabbage leaves and fold over rice. Place a large cabbage leaf on the bottom of a deep baking dish and put rolls on top. Pour cooked tomatoes over rolls and add \% Ib. of butter. Bake 1 hour at 350°F or till cabbage leaves are soft. Serves 8 to 12. 4 Florence Chernenko CABBAGE ROLLS 2% 2 Cups ground beef (any kind) 2 Medium onions chopped 1 Cup rice (uncooked) 4 Cloves garlic (crushed) ¥, Cup barley (uncooked) Salt and pepper to taste Wrap bits of filling with blanched cabbage leaves OR stuff filling into green peppers. Line cooking pot with shredded cabbage, place rolls on top and cover with more shredded cabbage. Pour tomato juice diluted with a bit of water and seasoned, over ingredients in pot and cook over low heat. . Serve with gravy or sour cream. Joseph Karas 35
