70 CHOCOLATE FILLING 1 6 ounce package chocolate pieces 2 egg whites, beaten stiff 4 egg yolks 1 cup cream, whipped 1 teaspoon vanilla Shaved bitter chocolate Place chocolate in top of double boiler. Melt and remove from heat. Beat in egg yolks; fold in egg whites and vanilla. Fold half the whipped cream into the custard and pour into meringue shell. Spread rest of cream over top. Sprinkle with shaved chocolate. Chill several hours. COFFEE CREAM 4 egg yolks 1/4 cup strong coffee 3/4 cup sugar 3/4 cup creamed butter 1/2 teaspoon cornstarch Thoroughly combine egg yolks with sugar in top of double boiler. Mix cornstarch and coffee. Add to egg mixture. Cook, stirring constantly, until thickened. Remove from heat and stir occasionally until cool. Slowly add creamed butter and mix until well blended. Spoon into meringue shell. SWEET SAUCES LEMON SAUCE 1/4 cup sugar 1 tablespoon butter 1 tablespoon cornstarch OR 1 tablespoon lemon juice 2 tablespoons flour Grated lemon rind 4 1 cup boiling water Mix sugar and cornstarch. Stir in boiling water. Cook over direct heat, stirring until thick and no starch taste remains. Add butter, lemon juice and rind. Brown Sugar Sauce: Use 1/2 cup brown sugar, 1-1/2 tablespoons flour, and 1 teaspoon vanilla instead of lemon. Vanilla: Follow Lemon Sauce recipe using 1 teaspoon vanilla instead of lemon. Caramel: Follow Lemon Sauce recipe using 2 tablespoons caramel instead of lemon. MINCEMEAT SAUCE 1-1/2 cups mincemeat 1/2 cup chopped nuts 3 tablespoons brown sugar 1/4 cup water 6 tablespoons orange juice OR lemon juice Heat ingredients. Flavor with brandy, if desired. Pour over ice cream. RUM SAUCE 1/2 cup butter 1/2 cup boiling water 1 cup brown sugar 1/3 to 1/2 cup rum 1 tablespoon all-purpose flour Blend butter, sugar and flour in saucepan. Add boiling water slowly, stirring, until smooth. Cook over low heat until mixture is clear. Remove from heat. Add rum. CINNAMON SAUCE 3/4 cup white sugar 3/4 cup hot water 2 teaspoons cinnamon 4 tablespoons butter Mix sugar, cinnamon and water. Boil 5 minutes. Add butter. Serve hot over apple pie or fruit fritters. ;
