CAKES 35 SPONGE CAKE 1 cup sugar 1 cup sifted flour 3 eggs Y cup boiling water 1 teaspoon baking powder Salt and flavoring Break eggs in sugar and beat until very light and creamy, about 10 minutes. Fold in flour sifted with baking powder, add salt and flavoring; last stir in boiling water. Bake in layers at 375 degrees. When cold spread whipped cream between layers and on top and serve. SPONGE CAKE 5 eggs Y% teaspoon salt 1 cup cake flour 1 orange (grated rind 1 cup sugar and juice) Beat the yolks until thick, gradually beat in the sugar which has the grated rind mixed with it. Add juice of orange. Beat egg whites until stiff. Fold part of them into the first mixture then fold in the flour which has been sifted before measuring and to which the salt has been added. Fold in rest of beaten whites. Bake in a tube pan at 325 degrees for 45 minutes. SUNSHINE CAKE 6 eggs (cold) Pinch salt 1 cup sugar sifted 5 times Grated rind of 1 orange 1 cup cake flour sifted 4 teaspoons orange juice 5 times 2 teaspoons lemon juice Beat the egg whites about half stiff and add 1 teaspoon cream of tartar and salt and continue beating until dry. Add the well beaten yolks, add sugar a little at a time, fold in flour, orange rind, orange and lemon juice. Bake in a large angel- cake pan at 275 to 300 degrees for 1 hour, having oven very cool at first. Sprinkle with cocoanut before baking or ice with boiled icing to which 4 marshmallows have been added. WALNUT SPANISH CAKE 1 cup flour Pinch salt 1 teaspoon baking powder Y2 cup milk 1 tablespoon cinnamon Y2 cup butter 2/3 cup finely chopped walnuts 1 cup sugar 2 eggs Cream butter, add slowly the sugar, creaming constantly. Sift flour, baking powder and cinnamon together and mix with the walnuts. Beat yolks, add the milk and beat thoroughly. Add the yolks a little at a time, alternately with the walnut mixture, fold in the beaten whites last. Bake in square pan at 350 degrees for 30 minutes. CARAMEL FROSTING: 2 cups brown sugar, Y2 cup cream or milk, Y%4 cup butter, 1 teaspoon vanilla. Boil sugar, cream and butter until it forms a ball when dropped in cold water, cool, add vanilla, and beat 20 minutes. (DEM.) SPANISH BUN 1% cups brown sugar 2 cups flour 2/3 cup butter 3 teaspoons baking powder 3 egg yolks 1 tablespoon cinnamon 1 cup milk Y nutmeg (if desired) 1 teaspoon vanilla Pinch salt Bake at 350 degrees for 25 minutes. ICING: Beat the 3 egg whites until stiff, adding Y2 teaspoon baking powder before they become stiff. Then add 1 cup brown sugar and 1 teaspoon vanilla. Spread on cake, sprinkle lightly with cinnamon. Return to moderate oven and let brown slightly.
