26 FRIENDLY CIRCLE—1949 Gumdrop Cake 1 c. white sugar, 4c. butter, 2 eggs, % tsp. salt, 1 Ib. gumdrops (omit the black ones), 1 c. seedless raisins, 2 c. flour, 2 tp. b. powder, % c. milk. Cut gumdrops with scissors, add raisins and cover with flour. Bake in loaf tin. Do not use for several days to allow flavor of gumdrops to permeate. —Eva Crawford. Dark Cake lc. sugar, %c. butter, %c. sour milk, 2 eggs, 2 tbsps. molasses, 14 c. raisins, spices to taste, flour to make a stiff batter. —Mr,. Hattle. Boiled Raisin Cake Boil 1 cup raisins, let cool, 1c. b. sugar, 1%4 c. butter, 2 egos, 1 tsp. each nutmeg and cloves, add % cup of the raisin water and 2 tbsps. of sour cream, 1 tsp. soda, 2 c. flour, last of all fold in the raisins. —Mrs. Hattle. Irish Cake 2 c. white sugar, % c. unsweetened chocolate, melted, 1 c. mashed potatoes, 1 tsp. each cinnamon, cloves, nutmeg. | tsp. soda dissolved in 1 c. sour milk, 2% c. flour, 1 lb. raisins. Bake fully 1% hrs. in rather slow oven. —M. Coleman. Gingerbread : 2 eggs, 34 c. each brown sugar, molasses and melted shortening, 2% c. flour, 2 tsps. each soda and ginger, 1% tsps. cinnamon, % tsp. each cloves, nutmeg and baking powder, | c. boiling water. Add beaten eggs to sugar, molasses and shortening. Then add dry ingredients which have been sifted together. Lastly add boiling water and fold in. Bake with oven about 400. —M. Coleman. Jersey Lily Cake Y% c. butter or shortening, 1c. white sugar, 1 c. sweet milk, 2 egg whites, 1 tsp. vanilla, 2 tsps. b. powder, 2 c. flour, nuts and raisins chopped. Cream butter and sugar, add egg whites beaten, flour and milk alternately, add vanilla. Put half of batter in pan, about 8x8; spread with nuts and raisins, put remainder of batter over the top and bake in moderate oven. —Mrs. Baptist, Vancouver.
