After 1 hour, add tomato slices and cheese (4 c. shredded). Cook 15 minutes more. Cut very thin slices about 3" thick. Add zc. soya sauce and sugar and marinate at least half an hour. Cut tomatoes and peppers into 1" cubes. Heat oil; add garlic and ginger. After 1 minute, remove garlic, add peppers. Saute for 3 minutes, stirring occasionally. Add beef and its liquid and saute for 3 minutes. Add tomatoes and immediately blend cornstarch and remaining soya sauce and gently stir it into the mixture. Cook, stirring for 1 minute. Serve with fluffy rice.
