44 THE BLUE BIRD CooK BooK MOTHER’S PORK CHOP CASSEROLE WITH SCALLOPED POTATOES Place 6 thick lean rib pork chops in buttered pyrex baking dish. Prepare 1 cup brown sugar, 3 tablespoons dry mustard moistened with just enough cream to bind the sugar and mustard together. Place a tablespoon of this thick mixture on each chop. Then slice potatoes thinly and place around and between the chops according to the size of your dish. Then dot potatoes with remaining sugar and mustard mix- ture. Salt and pepper and pour coffee cream over all so that there is about an inch of cream and bake in 350-degree oven, until tender, 1 hour or more. If in a hurry bring cream to boiling point before pouring over meat. Excellent to make in auto- matic ovens. Serve with boiled celery and peach and cottage cheese salad. Also toasted French bread. LASAGNE COOK: Y lb. thin noodles and 2 Ib. broad noodles SAUCE 2 tins (8 oz.) tomato sauce 1 teaspoon spaghetti sauce (or paste) seasoning (Spice Island brand) 1 teaspoon worcestershire sauce 1 teaspoon oregano Yq teaspoon garlic powder Y2 teaspoon salt ) 1 teaspoon celery salt 1 can mushrooms, sliced Mix all ingredients and bring to a boil. BROWN: 1% Ibs. hamburger in a heavy skillet Into a large casserole put a layer of noodles, then a layer of hamburger © followed by a thin layer of grated cheese. Repeat layers till all ingredients are used. Pour boiled sauce over all and top with grated cheese. Bake at 300 degrees 40 to 60 © minutes. Serves 8, and can be prepared in advance ready for baking. FONDUE WITH MUSHROOM SAUCE 1 cup macaroni, cooked in boiling 1 cup grated cheese water then drained 3% cup chopped green pepper 4 eggs, separated 6 tablespoons chopped pimento 1 cup milk 2 cans undiluted condensed Y2 teaspoon salt mushroom soup 1 cup soft bread crumbs Beat egg yolks. Add milk, salt, crumbs, cheese, macaroni, green pepper and pimento. Beat egg whites stiff and fold into the mixture. Put in greased casserole and bake | hour at 325 degrees. Serve with mushroom sauce made by heating the two cans of undiluted mushroom soup. | BAKED SANDWICHES Remove crust from 20 slices of bread. Fit in casserole or baking dish 10 of the slices. Next, grind together 1 lb. raw ham and 1 Ib. sharp cheese. Mix and spread on the 10 slices of bread in the casserole. Then fit the 10 remaining slices on top of mixture. Beat together 4 eggs, 4 cups milk and 34 teaspoon dry mustard. Pour over sandwiches and let stand 2 hours or more. Then bake in slow oven (325 degrees) 1 Y% hours or more. ANY MEAT - VEGETABLE CASSEROLE 1 cup diced potato 1 cup peas 1 cup diced celery 1 teaspoon salt 1 cup diced carrot 1 teaspoon sugar 1 cup diced onion Y2 teaspoon pepper 1 cup diced tomato 2 tablespoons melted butter Mix and bake in casserole. Pre-heated oven for 1 hour at 300 degrees.
