Time: | hour 3 tablespoons shortening 14 tablespoon lemon juice lg cup brown sugar 1 egg, well beaten 14 teaspoon salt 114 cups sifted all-purpose flour 14 cup prunes, apricots or 2 teaspoons baking powder what have you (uncooked), 1 teaspoon baking soda chopped 14 cup whole wheat flour or V6 cup milk bran Mix together the shortening, brown sugar, salt, chopped dried fruit and milk. Heat slowly till the sugar is dissolved; cool to lukewarm. Add the lemon juice and the well beaten egg. Sift together the flour, baking powder and baking soda; add the whole wheat flour or bran and mix. Add the dry ingredients to the fruit | mixture. Stir well but do not beat. Pour into an oiled pan 9” x 3” x 3” which has been lined with oiled paper; bake in a moderate oven about 1 hour. Loaf should stand for 24 hours before slicing. SALLY LUNN Temperature: 375°F. Time: 45 minutes 14 cup shortening 1 cup milk 34 cup white sugar 1 tablespoon sifted all-purpose 2 cups sifted all-purpose flour flour 2 teaspoons baking powder 1 tablespoon butter 14 teaspoon salt 2 tablespoons brown sugar 2 eggs, lightly beaten 1 teaspoon cinnamon Cream together the shortening and white sugar. Gradually work in the 2 cups all-purpose flour until the mixture is crumbly. Measure out 4 cup of this mixture and set aside; to the remainder add the baking powder and the salt. Beat the eggs lightly; add the milk. Add the egg mixture to the flour mixture, stirring lightly and quickly. Pour the batter into an oiled pan 8” x 12”. To the re- served 14 cup of the shortening mixture add the | tablespoon flour, the butter, brown sugar and cinnamon; sprinkle on the top of the uncooked batter. Bake in a moderately hot oven (375°F.) until done. When cool, cut in squares; split and spread with butter. | Yield: 12 squares.
