Applesauce Bread Pudding 1 tablespoon butter 1 20-oz. can applesauce 4 slices day-old bread 1 teaspoon lemon juice 34, teaspoon cinnamon 14, cup seedless raisins 2 tablespoons sugar Combine applesauce, lemon juice and raisins and place half of this mixture in the bottom of a greased 1-quart baking dish. Butter bread and cut 3 slices in small cubes and the remaining slice in 4 triangles. Place the bread cubes on top of the applesauce mixture. Mix together cinnamon and sugar and sprinkle half of this over the bread cubes. Top with remaining applesauce mixture and then with bread triangles, pushing them down slightly into applesauce mixture. Sprinkle the remaining cinnamon-sugar mixture over the pudding. Bake in a moderate oven (350°F.) 30 minutes. Allow to cool before serving. Sweetened whipped cream may be used as a topping, if desired. 4 to 5 Servings Applesauce Cake 2\% cups sifted flour 14, cup shortening 114 cups brown sugar 114 cups canned sweetened 1 teaspoon baking powder applesauce 1 teaspoon baking soda 2 eggs, unbeaten 114 teaspoons salt 14, cup flour 14, teaspoon cinnamon 1 cup chopped seedless raisins 14, teaspoon cloves 1 cup chopped walnuts Sift together into bowl flour, sugar, baking powder, baking soda, salt and spices. Add shortening and applesauce and beat 2 minutes either by hand or with an electric mixer at medium speed. Add eggs and beat 2 more minutes.
