In place of the cheese, grated carrot may be used or chopped parsley. It is best to brush the batter lightly with melted butter when using carrots or parsley; the biscuits are richer and they also roll better. Yield: 24 pinwheels. POTATO SCONES Temperature: 425°F. + Time: 15-18 minutes 114 cups sifted all-purpose 1g cup shortening flour 1 cup dry mashed potatoes 2 teaspoons baking powder 1 egg, slightly beaten lg teaspoon salt 6 tablespoons milk Sift together the flour, baking powder and salt; cut in the shortening until the mixture is like coarse corn meal; rub the mashed potatoes into the mixture (they should be dry and mealy). Slightly beat the egg; add the milk; stir into the potato mixture, mixing very lightly. Turn on a floured board and divide into 3 parts. Roll each part into a round; cut each round into 4 scones. Bake in a quick oven; serve hot with butter and honey. Yield: 12 scones. COFFEE RING WITH FRUIT FILLING Temperature: 450°F.-350°F. Time: 35 minutes 2 cups sifted all-purpose flour 1 cup milk 414 teaspoons baking 1 egg, slightly beaten powder 14 cup brown sugar V4 teaspoon salt 14 cup currants 1 tablespoon white sugar l4 cup candied cherries, \4 cup shortening chopped Sift together the flour, baking powder, salt and sugar. Cut in the shortening until the mixture is the consistency of coarse corn meal. Make a well in the centre; add the milk all at once. Stir lightly and turn on a floured board. Gather into a ball and knead lightly for 20 counts. Roll into an oblong roll about 14” thick. Beat the egg slightly; add the brown sugar, currants and cherries; spread on the batter. Roll up as for a jelly roll and place on an oiled pie plate, joming the ends to make a circle. With the scissors, slash at 2” intervals. Bake in a hot oven for 10 minutes; reduce the heat and continue baking till done, about 25 minutes. If you want the coffee ring to look like a million dollars top it with this glaze: Summer together for 3 minutes 2 tablespoons of fat and 2 table- spoons of corn syrup. While the ring is still warm, pour the glaze over it. Yield: 12 slices.
