CANDIES TAFFY APPLES 2 cups white sugar Vanilla 1/3 cup corn syrup Food coloring 1/3 cup water 1 teaspoon butter Stir sugar, corn syrup and water together over low fire to melt sugar. Boil to brittle stage, 300 degrees F. on candy thermometer. Remove from heat. Add butter, vanilla and food coloring. Insert skewers in washed, dried apples and dip. Yield: approximately a dozen apples, TWO-TONE COCONUT ICE 3-1/4 cups sifted icing sugar 3 tablespoons cold water 1/2 pound medium shred coconut Red food coloring Mix coconut and sugar thoroughly in a bowl. Add cold water and mix ingredients thoroughly to combine the mixture. Press half the mixture into a buttered 9 x 9 inch pan. Color the remainder with food coloring and press firmly down over the first layer. Let chill 24 hours. Cut into pieces, as desired. FIVE-MINUTE FUDGE 3 cups brown sugar 3/4 cup powdered cocoa 1 cup butter or margarine 1 pound (3-1/4 cups ) sifted icing 3/4 cup liquid coffee sugar Measure first 4 ingredients into large saucepan. Bring to a boil, over low heat, stirring often. Boil vigorously for 5 minutes, stirring all the time. Remove from heat. Stir in the icing sugar and spread quickly into buttered 8 x 8 inch pan. Cool. Cut into squares. PUDDING POWDER FUDGE 1 regular-size pudding powder (the 1/3 cup milk kind you cook) 1 tablespoon butter 1 cup white sugar 1/2 cup chopped walnuts Put pudding powder, sugar and milk in heavy saucepan. Bring toa boil, stirring all the time. Boil hard for 10 minutes, stirring often. Take from heat. Add butter and nuts. Add vanilla, if desired. Beat for about 2 minutes or until candy starts to thicken and to lose its shine. Pour into buttered plate. Cool. Mark off into squares. Variations: Add 1/2 cup coconut to the chocolate mix. To the butterscotch mix add 1/2 cup chopped cherries or fruit cake mix. Nuts or fruit could be added to the vanilla mix. PEANUT BRITTLE 2 cups white sugar 1/2 teaspoon salt 1/2 teaspoon baking soda 3 cups peanuts Place sugar and salt in large, heavy frying pan. Place over medium heat and stir with a wooden spoon until the sugar melts and turns a light gold color. Stir in the soda. ( The mixture will foam up vigorously) Pour the candy mixture quickly over the peanuts placed on a buttered pan. Cool. Break into pieces. 81
