CHOCOLATE CHIP CAKE 1/3 cup butter or margarine 34 cup flour Y% cup white sugar 1 teasp. baking powder Y¥ cup brown sugar 1 teasp. vanilla 3 egg yolks dash of salt Topping 1 pkg. chocolate chips 1 cup brown sugar 3 egg whites 1 cup cocoanut Mix all together as given and put in square pan. Sprinkle chips over batter. Beat egg whites stiff and add brown sugar and coco- nut, spread over chips. Bake at 350 deg. for 25-30 minutes. M. Tweedie (Russell 1950A). BANNOCK 2% to 3 quarts of flour 2 teasp. sugar 2 teasp. salt 4 teasp. baking powder Sift together and put in large pan. Make a well in center of flour. In this well pour: 2 cups warm water, % cup melted fat (beef drip- pings) or shortening. Work in the flour to a stiff dough, knead well. Separate into three pieces. Knead each piece into a ball and roll out to % inch thick. Prick with a fork. Place in a well greased tin and bake at 375 degrees until nicely browned. B. Scott (Edwards ’36). ORANGE CAKE % cup butter 1 cup white sugar 1 egg (beaten) 1 cup sour milk 1 teasp. baking soda 1 teasp. baking powder 1 cup chopped dates 1 cup raisins 2 cups flour grated rind of 1 orange Stir soda into milk. Sift baking powder into flour. Combine all in- gredients. Pour into greased 9x12 pan. Bake at 350° for 40-45 minutes. CHRISTMAS COFFEE CAKE with sour cream 1% cups sifted flour 2 eggs 1 teasp. salt 1 cup dairy sour cream 14 teasp. baking powder % cup butter 2 cup glace cherries 1/3 cup brown sugar 2 tbsp. chopped citron peel 1 teasp. cinnamon 1 cup sugar 34 cup chopped Brazil nuts Oven 350°. Sift, measure flour, resift with salt and baking powder. Stir in cherries and peel. Cream butter—add (1 cup) sugar. Beat until blended—add eggs one at a time. Stir in flour mixed alter- nately with sour cream. Spread % batter in buttered 9x 9x2 pan. Mix brown sugar, cinnamon and nuts—sprinkle % on batter. Top with remaining batter and nut mixture.
