150 THE BLUE BIRD CooK BOooK AFTERNOON TEA SALAD 1 pkg. lemon jello Y2 cup tomato sauce or 1 cup hot water hot catsup Y2 cup vinegar Y2 cup minced onion Y2 cup minced celery Dissolve jello in hot water, add vinegar and tomato sauce. When nearly set add onion and celery and put in moulds. WHITE SALAD 2 cups cabbage Y2 cup pineapple (crushed 1 cup celery or diced) Y cup small marshmallows Y% cup almonds Y2 cup white grapes Slice cabbage fine, celery medium fine. Blanch and sliver almonds. Mix with fruit salad dressing. For topping, mix dressing with whipped cream. Garnish with a cherry. EGYPTIAN SALAD 1 tomato 1 bunch parsley (10 or more 1 onion (medium size) stems with leaves) Pickled hot pepper to taste, cut in very small pieces. Cut the tomato, onion and parsley in very small pieces. Salt and pepper to taste. Mix well. Cover with 3 tea- spoons olive oil and one teaspoon each of vinegar or lemon juice. DUTCH LETTUCE Shred 3 heads lettuce and cover 4 tablespoons sugar with the following dressing: 4 tablespoons vinegar 3 slices diced bacon 1 egg 2 tablespoons sour cream Brown bacon, add vinegar. Beat sugar, egg and cream. Add to bacon and stir until thick. Pour over lettuce and mix thoroughly. Serves 6 or 8. KIDNEY BEAN SALAD 3 cups canned kidney beans 3% cup diced celery 1 cup chopped sweet pickle 1 cup mayonnaise 5 hard-cooked eggs, sliced Lettuce Drain beans; add pickle, eggs and celery and toss together lightly. Add mayon- naise and blend. Chill thoroughly. Serve on shredded lettuce. Garnish with egg - wedges if desired. Serves 8. SEAFOOD SALAD 1 cup flaked cooked seafood 1 teaspoon finely minced onion (crabmeat, lobster, tuna or Salt and paprika to taste salmon) 1 cup diced celery 1 teaspoon lemon juice 1 cup lettuce in small pieces Mix lightly in order given. Chill thoroughly. Just before serving drain and toss together with mayonnaise to moisten. Serve on crisp lettuce.
