Time: 15-20 minutes 14 cup oatmeal, toasted 4. tablespoons white sugar 1 egg white 14 teaspoon vanilla lg teaspoon salt 1 cup cornflakes Oven toast the oatmeal until the flakes are golden brown. Mix together the egg white and salt; beat until stiff but not dry. Add the sugar gradually, spoonful by spoonful, beating all the time; add the vanilla. Fold in the cornflakes and the toasted oatmeal flakes; drop by spoonfuls on an oiled cookie sheet. Bake in a moderate oven until done. Yield: 20 cookies. GOLDEN FANCIES Temperature: 375°F. Time: 12 minutes 1 cup shortening 3 cups sifted pastry flour 1 cup brown sugar 1 teaspoon baking soda 1 egg, well beaten 14 cup hot water Cream together the shortening and sugar; beat until light; add the well beaten egg. Add the sifted flour and baking soda alter- nately with the hot water, mixing well. Chill the batter; place spoonfuls of batter on an oiled baking sheet about 2” apart; press flat with the tines of a fork. Bake in a moderate oven. Yield: about 100 cookies. They’re particularly good put together with strawberry jam just before serving. HONEY-OATMEAL HERMITS Temperature: 350°F. Time: 15-18 minutes 1 cup sifted pastry flour 2 eggs, well beaten 1 teaspoon baking soda 3 tablespoons sour milk \4 teaspoon salt 1 cup raisins, chopped ¥4 teaspoon allspice 14 cup nuts, chopped lg teaspoon cinnamon 8 maraschino cherries, chopped 114 cups rolled oats 1 tablespoon lemon juice lg cup shortening 1 teaspoon grated lemon rind 1 cup honey Sift together the flour, baking soda, salt and spices; add the rolled oats; blend. Cream together the shortening and honey; beat till light. Add the well beaten eggs and the sour milk; add the sifted dry ingredients. Mix lightly; add the chopped fruit and nuts, the lemon juice and rind. Chill the batter; drop by spoonfuls on an oiled cookie sheet. Bake in a moderate oven till done. Yield: about 50 spicy fruit drops. Store them in a tin cookie box, for additional flavor leave a couple of prunes in with cookies.
