CZECH CARRAWAY SEED SOUP 4 oz. melted butter 1 qt. boiling water 14 Ib. assorted diced vegetables 3 oz. flour 14 tsp. carraway seed Chopped green he To 2 oz. melted butter fry assorted diced vegetables and carraway seed. Add 1 qt. boiling water, salt. In a separate pan melt 2 oz. butter. Add 3 oz. flour. Stir constantly until red in color. Place this in the boiling soup and continue boil- ing slowly for 1 hour. When ready to serve, add chopped green parsley and serve with croutons of bread squares, browned in butter.—Courtesy Manka Prokupek, Manka’s Czech Restaurant. i VANILLA CRESCENTS 1% lb. cake flour 14 pkg. vanilla beans 14%, 1b. butter 1%4 lb. granulated sugar 2 oz. berry sugar Lemon rind 10 oz. peeled almonds 1 egg yolk Mix flour, berry sugar, vanilla beans ((crushed with three cubes of sugar), lemon rind (very little) and ground almonds. Add butter, 1 egg yolk and blend into dough. Put in refrigerator for 15 minutes. After, thaw, roll out in a long cylinder (% inch in diameter) slice in 1 inch pieces. CAKES SOUR MILK CHOCOLATE CAKE 1c. sugar 2 c. cake flour | 1% c. shortening %4 tsp. baking soda 2 eggs Y% tsp. salt 3 squares unsweetened choco- 14% c. sour milk late ! 1 tsp. vanilla Cream sugar and shortening; add eggs one at a time. Add the melted chocolate. Sift together flour, soda and salt. Add to cream mixture alternately with sour milk and vanilla. Pour into 2 greased 9 inch layer pans. Bake at 375°F. for 25 minutes. Miller. $100 CHOCOLATE CAKE 1% Ib. butter or margarine 1 rounded tsp. baking soda 2 oc. white sugar 1 ec. fine cocoanut 1 ec. buttermilk 1 ec. finely-chopped walnuts 4 eggs 2 squares melted chocolate 2 ec. flour 1 tsp. vanilla. Dissolve soda in buttermilk and set aside. Cream butter or margarine and sugar, add egg yolks one at a time and beat well. Add flower and buttermilk alternately, then add chocolate, vanilla, cocoanut,.and nuts. Fold in stiffly- beaten egg whites. Bake in greased paper-lined 8 x 10 inch cake pan at 375°F. for about 50 minutes. Or makes 3 layers, baked at 350°F. for about 30 minutes. —Courtesy Mrs. Rose Rutherford. 13
